Ingredients : Basumathi Rice - 2 Cups Green Peas , Potatoes, Beans, Carrot, Cauliflower etc - 1 1/2 Cup Large Onion - 2 Tomato - 2 Green Chillies - 3 Red Chilli Powder - 1 1/2 tsp Turmeric Powder - 1/4 tsp Ginger Garlic Paste - 1 1/2 Tbsp Mint - Handful Coriander - Handful Ghee + Oil - 4 tbsp Salt - as needed Fried Cashew Nuts - 8 Kesari Colour - 1 Pinch Soaked saffron Milk - Little Curd - Half Cup Lemon - as needed For Seasoning : Cinnamon - 1 Piece Cloves - 2 Cardamom - 2 Star Anise - 1 Maratti Mokku - 1 Bay Leaf - 1 For Decoration : Fried Onion in ghee - 1 Cashew Nuts - 6 Method : 1. Rinse the rice very well in water till it runs clear of starch. then soak the rice for 30 mins in enough water. Cut the Vegestables. 2. Heat oil and Ghee in the pressure cooker or pan. Add the thinly sliced onions. saute them on a low to medium flame, till they get golden. Now add the gingergarlic paste to the 3/4 of the browned onions in the cooker or pan, stir and saute till the raw aroma of gingergarlic goes away. Now add the biryani masala & red chilli powder and all. Add the chopped vegetables, mind, coriander leaves, colour and stir. 3. Reduce the flame and add the yogurt slowly, stirring it. Now add 3 cups of hot water, rice and salt. stir very well. The close the lid with stronger plate. Dont close with cooker lid. Stir 2 to 3 three times in between. 4. Then heat the dosa pan in low heat then place the cooker on it. Then place a stonger pan with water. Allow it for 5 minutes. Turn off the stove and add sprinkle half of the mint leaves, 1 tbsp oil/ghee and the saffron milk also add half of the fried onion evenly on this layer. Serve along with curd onion.
