Hyderabad Chicken Dum Briyani | ||||||||||||||||||
Ingredients for Hyderabad Chicken Dum Briyani:
Chicken with Bone-3/4kg Onion-2 (Chopped Lengthly) Oil-1/4 Cup Ghee-2 tbsp Coriander Leaves-1/4 Cup Mint-1/4 Cup Saffron-1 tsp Milk-1/2 Cup (Luke Warm)
Ingredients to Cook Rice:
Basmati Rice-3 Cup Bay Leaf-1 Cloves-2 Marathi Mogga-1 Star Anise-1 Cumin-2 tsp
Ingredients for Marination:
Green Chilly-5 (Chopped) Ginger, Garlic Paste-2 tbsp Curd-1/2 Cup Cumin-2 tsp Chilly Powder- 2 tsp Turmeric Powder-1/4 tsp Coriander Powder-1 tbsp Salt-as Needed Lemon Juice-2 tbsp
Ingredients for Grinding:
Coriander Leaves-1/4 Cup (Chopped) Cinnamon-1 Inch Mint-1/2 Cup (Chopped) Pepper-7-8 Cardamom-3 Cloves-3
Procedure to make Hyderabad Chicken Dum Briyani:
1. Wash the rice and soak for half an hour. Heat oil in a pan, add chopped onion and fry till get golden color. 2. Wash the chicken and keep aside. Fry and grind the given ingredients except mint and coriander leaves and then grind again along with mint and coriander leaves. Mix the grinded paste together with chicken and marinate along with given marinating ingredients. Add little amount of fried onion together with marinate chicken. 3. Mix all together and soak for 4 hours. Heat water in a deep pan. When water starts boiling, add ghee, oil, cumin, bay leaf, marathi mogga, star anise, cinnamon and cloves. 4. When water boiled well, add soaked rice and allow to boil for 4 minutes. Strain the water and keep aside. Mix saffron in luke warm water. 5. Heat a wide deep vessel, add oil, ghee and soaked chicken and then cook on high for 2 minutes. Spread the cooked rice over the chicken layer. Add fried onion, remaining coriander leaves and mint over the chiken. Finally add saffron milk. 6. Cover the vessel using a glass lid. Allow high flame for 3 minutes. Then allow medium flame and remove the vessel from stove and place a non stick vessel. Allow to heat. 7. Place back the briyani vessel on the non stick vessel and cook briyani for half an hour. If allow simmer it will take 40 minutes to cook. We can add fried nuts like raisin and cashew nuts.
