Ingredients for Bhindi Spices:
Lady Finger-1/4kg Chaat Masala-1tsp Black Gram-1tbsp Rice Flour-1tbsp Oil-as Needed Chilly Powder-2tsp
Ingredients for Making Masala:
Onion-1 Tomato-4 Ginger, Garlic Paste-1tbsp Mint-Hand Pinch Dry Chilly-1 Cashew Nuts-15(Grinded) Butter-1tbsp Coriander – for Decorate Salt, Oil-as Needed Garam Masala-2tbsp Kasuri Methi-1tbsp
Procedure to make Bhindi Spices:
1. Wash the lady fingers and cut in to small pieces and pat dry.if we cook in the evening, should pat dry on before morning itself. Then mix the frying ingredients together with this pieces and stir finely. 2. Black gram use to absorb the wet. Heat oil in a pan and deep fry the lady fingers and drain on absorbent paper. Take a vessel, mix chopped tomato, mint, garam masala, grinded chilly powder and kasuri methi along with water and mash them well. 3. Heat oil in a pan, add onion and saute well. Then add ginger, garlic paste and fry till the raw smell subsides. Then add tomato paste and fry until get mashy. 4. Add enough need salt to cook well. Then add grinded cashew nut paste, butter and boil for 2 minutes. Slow the flame, when adding cashew nut paste. Add water to avoid stick at bottom. 5. Then add fried lady fingers and fry well. When masala mix together with lady fingers , remove from flame. Garnish with coriander leaves. Rice and chappati is nice combination for this. We can also do this without cashew nuts and butter.
